Roasted Buttercup Squash

This squash is a perfectly seasoned fall dish!

Servings: 8 servings
  • 1 whole buttercup squash
  • 1-2 tbsp. extra virgin olive oil
  • Montreal Steak Seasoning (homemade for Whole 30 compliant)
  1. Preheat oven to 400 degrees.

  2. Pierce squash multiple times with a fork or knife. Microwave squash for 3 minutes.

  3. Slice squash in half and remove seeds and stringy insides. Peel squash and dice into cubes.

  4. Toss cubes in a large bowl with 1 tablespoon of olive oil (drizzle more if needed).

  5. Spread squash cubes on large rimmed baking sheet. Sprinkle liberally with seasoning; stir and season more.

  6. Roast squash at 400 for 20-30 minutes or until tender, stirring once halfway though.
