Chicken Taco Orzo Soup
Servings: 8 servings
Ingredients
  • 2 c. leftover shredded taco chicken (or cooked chicken seasoned with taco seasoning)
  • 1 jar (16 oz) salsa
  • 1 can (4 oz) mild green chilis
  • 1 red bell pepper, diced
  • 1 can chickpeas (garbanzo beans)
  • 1/2 c. fresh or frozen corn kernels
  • 1 Roma tomato, chopped
  • 1 can (15 oz) no-salt tomato sauce
  • 2 tsp. salt
  • 2 1/2 c. chicken broth or bone broth
  • 2 c. water
  • 1 c. dry orzo
  • Optional Topping: crushed tortilla chips, cheddar cheese, sour cream, cilantro, etc.
Instructions
  1. Add all ingredients to Instant Pot and give them a quick stir.

  2. Put lid on and turn knob to seal. Set to 'Manual' for 2 minutes.

  3. When timer goes off, quick release pressure. Stir soup.

  4. Ladle into bowls and top with crushed chips, cheddar cheese, sour cream, cilantro, etc.
