Pot Roast Totchos (Tater Tot Nachos)
Servings: 4 servings
  • 1 bag frozen tater tots
  • 2 c. pot roast, shredded and warmed
  • 16 oz Velveeta, cubed
  • 1 can Ro-tel
  • 1/2 c. sour cream
  • 1 avocado, diced
  • 1/4 c. pickled or fresh jalapeno slices
  • Other optional toppings: shredded cheese, lettuce, black beans, salsa, guacamole, etc
  1. Cook your tator tots in your air fryer at 380 for 7-10 minutes or bake them in the oven according to package directions.

  2. While tator tots are cooking, make your queso. Place your Velveeta and ro-tel in a large microwave safe bowl. Microwave for 2 minutes; stir and continue microwaving in 1 minute increments, stirring in between, until smooth. 

  3. Layer tater tots on one large serving platter or 4 individual plates. Top with warmed pot roast.

  4. Drizzle queso over roast and tater tots. Top with sour cream, avocado and jalapeno slices. Add any additional toppings and serve!
