Cranberry White Chocolate Bars (Starbucks Copycat)
Ingredients
Bars:
  • 1 c. butter, melted
  • 1 c. brown sugar
  • 1/2 c. granulated sugar
  • 2 eggs, room temperature
  • 1 1/2 tsp. vanilla extract
  • 3 tbsp. fresh squeezed orange juice
  • 1 tbsp. orange zest
  • 1/2 tsp. cinnamon
  • 1 tsp. baking powder
  • 1/4 tsp. salt
  • 2 c. all purpose flour
  • 1 c. white chocolate chips
  • 1 c. dried cranberries
Icing:
  • 8 oz. cream cheese, softened
  • 2 c. powdered sugar
  • 1/4 c. orange juice
  • 1 tbsp. orange zest (optional)
  • 1/4 c. dried cranberries
  • 1/2 c. white chocolate chips, melted
Instructions
  1. Preheat oven to 350.  Spray a 15 x 9 jelly roll pan (or line with parchment paper).

  2. In the bowl of a stand mixer, combine butter and sugar. Beat in eggs, one at a time. 

  3. Pour in vanilla, orange juice and orange zest. Mix briefly.

  4. Sprinkle cinnamon, baking powder and salt over top of wet ingredients. Mix in flour, 1 cup at a time.

  5. Stir in cranberries and white chocolate chips.

  6. Press batter into pan. Smooth top. Bake 17-21 minutes, or until just starting to turn golden brown. Remove from oven and let cool completely.

To make icing:
  1. In bowl of a stand mixer, combine cream cheese and powdered sugar until smooth. Add orange juice and orange zest. Beat in 2 tbsp. white chocolate.

  2. Spread on cooled bars. Top with cranberries. Drizzle remaining white chocolate over top.
