This casserole is cheesy, comforting and full of flavor. Kick your comfort food cravings up a notch! Plus, it makes a great prep-ahead freezer meal!
Preheat oven to 350 degrees. Lightly spray a 13x9 casserole dish with cooking spray. Set aside.
Heat a large skillet over medium heat. Add turkey sausage and cook. When sausage is mostly cooked, drain excess grease.
Add peppers to skillet and cook for 3-5 minutes, until peppers just start to soften.
Turn heat off. Pour in mushroom soup and sour cream. Stir to combine.
Pour sausage mixture into casserole dish. Sprinkle 1/2 c. Parmesan over top.
Lay tater tots in rows with sides touching to cover entire casserole. Sprinkle 1 1/2 cups cheddar cheese over top.
Bake at 350 degrees for 40 minutes, or until the top is golden, the cheese is melted, and the sides are bubbly.
