Blueberry Maple Oat Bites

These delicious blueberry maple oat bites are the perfect toddler snack - egg/dairy/refined sugar free and little ones love filling their bellies with these!

  • 1 1/2 c. old fashioned oats
  • 1 tbsp. ground flaxseed
  • 1/4 c. all-natural, no sugar pancake mix
  • 1 tsp vanilla
  • 2 very ripe bananas
  • 1/4 c. unsweetened applesauce
  • 1 tbsp. pure maple syrup (NOT imitation)
  • 1 c. halved blueberries
  1. In a food processor or high-powered blender (I use my Ninja), pulse the oats until they are the consistency of instant oats. Add the flaxseed and pancake mix and pulse a couple times to combine.

  2. Peel the bananas and break into thirds. Put in blender along with vanilla, applesauce and maple syrup. Blend for 1-2 minutes, until well combined.

  3. Stir in blueberries by hand (I removed the blade from my blender and then stirred in the berries).

  4. Spoon evenly into greased egg bite molds. Cover mold loosely with foil. 

  5. Pour 1 1/2 c. water into the bottom of the Instant Pot. Place the trivet in, and put the egg bites mold on top of the trivet.

  6. Put lid on, seal, and set to 'manual' for 6 minutes. When the timer goes off, quick-release the pressure. Remove the egg bites mold, let cool for a few minutes and then pop the oat bites out!
