Sweet Cream Strawberry Cheesecake French Toast

Sunday mornings are for fancy breakfasts in our house. It’s the only morning we take our time getting ready and being lazy in the morning, so I like to cook a late (more like brunch, then) breakfast. Plus, my husband likes to take Sunday’s breakfast leftovers for breakfast at work on Monday. It’s a win-win!

Today’s breakfast (brunch) was heavenly, and I’ll be making it again soon! I told my husband about my idea to make this on Friday, and he’s been talking about it ever since then. When I made it today, I got one bite of his before the entire plate was gone.  That tells me this recipe is a keeper for sure!

 

 

This Sweet Cream Strawberry Cheesecake French Toast is absolutely one of the best breakfast recipes I’ve ever made. I used my easy strawberry kiwi jam and a cheesecake drizzle to top sweet cream french toast, then sprinkled the whole thing with just a little powdered sugar for over-the-top sweetness and perfection.

I highly suggest adding this to your breakfast or brunch rotation soon!

Sweet Cream Strawberry Cheesecake French Toast

Sweet cream french toast topped with sweet strawberry jam, creamy cheesecake drizzle and powdered sugar - an easy, fancy breakfast or brunch for your lazy weekend mornings!

Servings: 4 servings (2 slices each)
Ingredients
Sweet Cream French Toast
  • 8 thick slices bread
  • 4 eggs
  • 1 tbsp butter
  • 3 tbsp half and half (or milk)
  • 1 tsp pure vanilla extract
  • 1 tbsp brown sugar
Cheesecake/Strawberry Topping
  • 1 c. strawberry jam
  • 8 oz cream cheese, softened
  • 2 tbsp. white sugar
  • 1 tbsp half-and-half (or milk)
  • 1/2 tsp pure vanilla extract
  • 1/4 c. powdered sugar
Instructions
To make french toast:
  1. In a shallow, wide dish, crack 3 whole eggs and 1 egg yolk (discard egg white on last egg). Add vanilla and whisk.

  2. Heat butter in small dish for 15 seconds, or until melted. Add half-and-half and vanilla and stir.

  3. Add brown sugar to half-and-half and butter mixture. Stir to dissolve sugar. Pour into egg mixture and whisk. 

  4. Heat a skillet over medium heat. Place 1 slice of bread into egg mixture, turn to coat, and lift to shake off excess. 

  5. Place on skillet and cook each side until lightly browned. Repeat with remaining slices of bread (I typically cook 2 at a time). 

To make cheesecake drizzle:
  1. Add softened cream cheese, sugar, half-and-half and vanilla to a medium bowl. Use a hand mixer or stand mixer to mix until smooth and creamy, 1-2 minutes. 

  2. Spoon into ziploc bag or pastry bag and place in refrigerator until ready to use. 

To assemble:
  1. Lay one slice of cooked french toast on a plate. Spread strawberry jam over toast. Cut corner on cheesecake ziploc bag, and squeeze a diagonal drizzle over french toast. 

  2. Top with a second slice and repeat jam and drizzle. Use a fork to dust powdered sugar over both pieces of french toast. Serve warm!
