Slow Cooker Beef Pot Roast

Pot roast is one of those ultimate-winter-comfort-foods. It’s rich, hearty, and goes well with pretty much anything – potatoes, pasta, veggies, etc.
My extended family usually comes over to my house for Christmas, and pot roast is an easy meal to make for everyone. I throw the roast in the slow cooker with a few ingredients, and then my hands are free to do the other cooking for the rest of the day. I try to make meals with as little possible labor as I can, because I’d like to be able to enjoy the holiday as well!
This is also a great every day, slow cooker meal. Throw it in the crockpot before you head to work, and by the time you get home, it’s fall-apart-delicious and ready to eat.
To start, trim any fat off your roast and rub the roast with 2 tablespoons of my pot roast seasoning. You can also just use salt and pepper if you prefer.
Place your roast in the slow cooker. Pour pepper juice on top. Lay the stick of butter on top of the roast (right in the middle!) and arrange peppers around butter.
Place the lid on your slow cooker, and set the timer for 4 hours on high or 6 hours on low.
When the roast is done, it should fall apart easily. Use a fork to get the roast out of the slow cooker, and it’ll shred as you go.
I like to serve my roast with mashed potatoes or macaroni and cheese.
Also, my husband eats his roast with mustard. This is soooo strange to me. Does anyone else do that? I’d never heard of anyone doing it, but apparently his family has always eaten roast that way. So, I guess serve with mustard if that’s your jam (but probably don’t serve it with jam. Cuz, gross.).
TIP: If you want a complete one pot meal, dice a few potatoes, toss them in around the roast, and cook. They’ll soak up the juice from the peppers and the roast and have a nice zing of flavor to them!
- 1 4-6 lb. beef or pork roast
- 2 tbsp. pot roast seasoning
- 4 mild, whole banana peppers
- 1/4 c. juice from banana pepper jar
- 1 stick butter

Spray slow cooker. Trim excess fat off roast.

Rub roast all over with 2 tbsp seasoning.

Place roast in crockpot. Sprinkle juice and pepper over roast. Set butter on top of roast.

Set crockpot for 6 hours on low (or 3-4 hours on high).

Test roast for doneness. Shred or cut if desired.
