Slow Cooker BBQ Chicken Dip

Dips are popular in our house, and I take a dip to almost every gathering I go to. They’re easy to make, easy to take and easy to cleanup!

One of our favorites is my Instant Pot Buffalo Chicken Dip, which is perfect for game day. I’m a huge Iowa Hawkeye fan – every Saturday, you can find me decked out in Iowa gear, watching our team win! And you know we gotta have snacks while we watch. 

But – enter the toddler. He doesn’t do spicy foods; he puts them in his mouth, makes a face, scrapes the food off his tongue and shouts ‘hot! hot!’ But if we’re dipping chips into something, he wants to dip chips into something too.

So I created this Slow Cooker BBQ Chicken Dip with him in mind. Turns out, I love it as much as he does! And the first party I took it to had 3 different people giving me repeated compliments about how good it was. 

Moral of the story: make this dip. You’ll love it. Your kids will love it. Everyone will love it.

Better moral: make extra.

Slow Cooker BBQ Chicken Dip – the Ingredients

One of the great things about this bbq chicken dip is that it only takes a handful of ingredients: shredded chicken breast, a bottle of your favorite barbecue sauce, shredded cheddar cheese and sour cream. That’s it! And if you’re like me, most of those things are always in our fridge.

Making the Dip

Another great thing about this dip is that there are only a handful of steps to make the dip. (I seem to have a thing about handfuls today, huh?)

First, either spray your medium slow cooker or line it with a liner bag. Add one large chicken breast and pour 1/2 cup of bbq sauce over the chicken. Cover the slow cooker with the lid and cook for 3-4 hours on high or 6 hours on low.

When the chicken is cooked through, use your hand mixer or two forks to shred the chicken. You want it shredded pretty finely so you don’t have large pieces of chicken in your dip that are hard to scoop up with chips.

Either in a separate bowl or straight in your slow cooker, add 1 1/2-2 cups of bbq sauce and a 16 ounce container of sour cream to the shredded chicken. Stir to mix well.

Add 1 1/2 cups of finely shredded cheddar and stir. Taste, and add more bbq sauce as needed. 

If dip is in a bowl, add back to slow cooker. Turn slow cooker on low and let heat until ready to serve. Drizzle bbq sauce and a handful of cheddar on top for presentation. 

 

Serving the Slow Cooker BBQ Chicken Dip

My favorite way to serve this dip is with tortilla chips. The saltiness from the chips perfectly complements the creamy bbq dip! 

You could definitely serve it alongside fresh cut veggies as well, and pita chips or corn chips would also be good! 

 

Dressing Up the Dip

Here are a few ideas of ways to make your dip just a little bit fancier (although if you’re serving it to people watching football, they usually don’t require anything fancy):

  • add 1 cup of frozen corn kernels when you add the cheddar cheese. 
  • add 1 (15 oz) can of drained, rinsed black beans.
  • make bbq chicken grilled cheese: top bread with gouda or provolone and a spoonful of dip before cooking in a skillet. 
  • replace half the shredded cheddar cheese with shredded pepper jack cheese to add some spice to your dip.
