Simple Carrot Cake Dip

Carrot cake is like quintessential Easter and spring time food, isn’t it? I mean, carrots are the Easter bunny’s favorite food, so it only makes sense to celebrate the holiday with a cake full of the orange vegetable.

To be honest, I’ve only started eating carrot cake in the last few years. To me, carrot cake tastes kind of like spice cake with carrots and maybe pineapple and/or coconut, and spice cake has never been my favorite thing. Also as a kid, who wants to eat a cake with vegetables in it?? But in the last few years I’ve grown an appreciation for carrot cake and carrot cake-inspired recipes.

This carrot cake dip is everything you love in carrot cake – spiced cake mix, cream cheese frosting and sweet pineapple – all in dippable form. Which, to me, is better than actual cake any ol’ day.

This makes a huge bowl of dip, so plan on inviting everyone you know to help eat it. Or, you, your husband and toddler can eat it every night for a week straight, while sitting on the floor in front of the couch watching The Grinch or Hop. Not that I can recommend that from personal experience or anything…

Simple Carrot Cake Dip – the Ingredients

Here’s your handy, quick-glance grocery list:

  • a box of carrot cake mix
  • an 8 ounce tub of whipped topping
  • a can of cream cheese frosting
  • a large can (20 ounces) crushed pineapple
  • an 8 ounce block of cream cheese

Grab your ingredients and let’s spend a few minutes in the kitchen!

 

Making the Simple Carrot Cake Dip

Thaw your whipped topping and leave your cream cheese out to soften.

When those ingredients are ready, beat the cream cheese and whipped topping together in the bowl of a stand mixer until the mixture is mostly smooth. It doesn’t have to be perfectly smooth, because you’re going to keep stirring as you as the other ingredients.

Scoop the entire can of cream cheese frosting into the bowl. Are you starting to get a sugar high yet? Turn the mixer on medium-low and completely combine the frosting into the cream cheese mixture.

Add the carrot cake powdery mix to the bowl and stir on low until combined. If you turn it on higher than low, you may throw powdery cake mix all over your kitchen.

Last, open your can of crushed pineapple. Drain it, then use a spoon to press down on the pineapple to push more liquid out. Alternatively, dump the can into a fine mesh strainer and use the back of the spoon to press out liquid. Too much liquid could make your dip watery. 

Dump the drained pineapple into the bowl and stir on low to mix it in completely.

Transfer the carrot cake dip into a cold-safe bowl. Refrigerate the dip for at least an hour before serving; this lets the crunchy carrot bits in the cake mix get soft and delicious.

Ideas for Serving:

  • Serve the carrot cake dip with anything sweet that you can use to dip: wafer rolls, graham crackers, animal crackers, apple slices, sweet crackers, etc. 
  • Pour the dip into a bowl with straight, unangled sides (think round cake pan or baking dish). Break wafer rolls in half and place them, broken side down, around the inside edges of the dish to create an aesthetically pleasing serving option. You can provide other things for dipping, or encourage people to simply pull up wafer roll sticks and eat them!

Ingredients
  • 1 box carrot cake mix
  • 1 can (15 oz) cream cheese frosting
  • 1 can crushed pineapple
  • 1 tub (8oz) whipped topping
  • 1 block (8 oz) cream cheese, softened
Instructions
  1. In the bowl of a stand mixer, beat softened cream cheese and whipped topping together until smooth.

  2. Scoop frosting from container into bowl and mix.

  3. Add carrot cake mix and mix on medium until smooth.

  4. Mix in can of pineapple.

  5. Spoon dip into bowl and refrigerate at least 1 hour before serving.

Serving suggestions: serve with graham crackers, animal crackers, fresh fruit, sweet crackers, or any other semi-sweet or sweet dippable food!

    Yum!! I am obsessed with pumpkin dip in the fall and this reminds me of a spring version! My favorite recipe uses marshmallow fluff and cream cheese. I may try this recipe with marshmallow fluff and report back!
