Pot Roast Totchos (Tater Tot Nachos)

These pot roast totchos (tater tot nachos) are the perfect way to use up leftover pot roast! They’re also a great reason to make a pot roast. Make use of your Instant Pot or slow cooker and your air fryer if you have one with this easy recipe!
The Super Bowl is coming up soon and I know you’re looking for new recipes to feed to hungry football fans. I’m pretty sure if it involves tater tots (these do), or queso (check!) or beef (yep!), then your hungry football fans are all in. Plus you can make pot roast for dinner the night before and use these to make the leftovers for Game Day!
Totchos.
It’s such a silly-sounding word, but it means something glorious. Instead of making nachos with tortilla chips, you use tater tots in their place. Then you pile on your meat and toppings and didn’t I say it was glorious?
For Christmas this year, I made a slow cooker pot roast and an Instant Pot pot roast (ha – pot pot). So with two roasts, we definitely had some leftovers to use up. Plus we’d just gotten our air fryer and I had some tater tots that I wanted to try out. Put those things together and pot roast totchos were born!
These beauties are super easy to make. You can either make a pot roast specifically for the totchos, or use up leftovers from a pot roast dinner.
Air fry or bake a pan of tater tots. Arrange them on a large serving plate (or individual plates if that works better for your family!).
Top with warmed pot roast.
Microwave your Velveeta and Ro-tel to make queso. Pour it over the roast.
Top the totchos with sour cream, jalapenos, avocado, and any other delicious nacho toppings you can think of. Black beans. Lettuce. Guacamole. Bell peppers. Shredded cheese. Salsa.
Oh boy. I think I’m going to need to make these again with some salsa and black beans. Yummmm.

- 1 bag frozen tater tots
- 2 c. pot roast, shredded and warmed
- 16 oz Velveeta, cubed
- 1 can Ro-tel
- 1/2 c. sour cream
- 1 avocado, diced
- 1/4 c. pickled or fresh jalapeno slices
- Other optional toppings: shredded cheese, lettuce, black beans, salsa, guacamole, etc

Cook your tator tots in your air fryer at 380 for 7-10 minutes or bake them in the oven according to package directions.

While tator tots are cooking, make your queso. Place your Velveeta and ro-tel in a large microwave safe bowl. Microwave for 2 minutes; stir and continue microwaving in 1 minute increments, stirring in between, until smooth.

Layer tater tots on one large serving platter or 4 individual plates. Top with warmed pot roast.

Drizzle queso over roast and tater tots. Top with sour cream, avocado and jalapeno slices. Add any additional toppings and serve!
