How’s the weather in your neck of the woods? Right now, we’re stuck inside with -1 billion degree windchills (ok, maybe a slight exaggeration, but not by much). But, the windchills are crazy dangerous (forecast to be down to -40!), so I can’t take a 1 year old outside to go anywhere

Luckily, he got plenty of new toys for his birthday, and he’s spending his day playing with all of them, and pulling out every last plastic container in the kitchen cabinets. Whatever keeps him entertained and happy. 

So I needed something to do to keep me from going too stir crazy, and I decided to whip up these no-bake Valentine Oreo Cheesecake Cups. I found the pink Oreos at Target – they have a ‘tangy’ filling, according to the bag. I guess it’s supposed to be like a candy heart in the middle? Not sure, but they’re pretty good. 

I promise whoever you serve these no-bake Valentine Oreo Cheesecake Cups to – your husband, boyfriend, kids, co-workers – will be showering you with Valentine’s Day love. They are that good. 

 

Let’s Make Cheesecake!

To start, place a cupcake liner in each cup of a 12 cup muffin tin. Place an Oreo in the bottom of each liner.

In your mixer, mix 2 blocks of cream cheese with 1 cup of powdered sugar and a teaspoon of vanilla. Mix in 1 tub of Cool Whip. Drop in a few drops of pink (or red!) food coloring and mix thoroughly. 

Spoon equally into the 12 cupcake liners. Use the back of the spoon to press the filling down so it fills all the spaces.

Freeze for 2+ hours. TIP: If you just leave them in the refrigerator, they will be sticky/tacky, so make sure to freeze them.  I also store the leftovers in the freezer!

To make the whipped cream, whip 1 cup of heavy whipping cream and 1 tablespoon of granulated sugar in your stand mixer (use your whip attachment). Whip on medium until stiff peaks form.

Right before you’re ready to serve your cheesecakes, use a piping bag and tip to pipe a dollop of whipped cream on each cheesecake cup, and top with a broken quarter of an Oreo and some festive, pretty sprinkles.

No-Bake Valentine Cheesecake Cups
Servings: 12 servings
Ingredients
  • 2 blocks (8 oz each) cream cheese, softened
  • 1 c. powdered sugar
  • 1 tub (8 oz) Cool Whip, thawed
  • 1 pkg. Valentine Oreos (plain will work too!)
  • pink or red food coloring
  • 1 c. heavy whipping cream
  • 2 tbsp. granulated sugar
  • sprinkles (optional)
Instructions
  1. Line a 12 muffin cup pan with cupcake liners. Place an Oreo in the bottom of each liner.

  2. In the bowl of a stand mixer, mix your cream cheese and powdered sugar together until light and creamy.

  3. Gently stir in Cool Whip. Add a couple drop of pink food coloring and mix carefully.

  4. Spoon cheesecake filling evenly into the 12 cupcake liners. Press down with the back of the spoon to make sure cheesecake fills the space.

  5. Freeze at least 2 hours.

  6. To make whipped cream: Beat cold whipping cream and sugar in stand mixer until stiff peaks form. 

  7. Use a piping bag and tip to pipe whipped cream onto each cheesecake. Decorate with remaining Oreos and sprinkles. 

  8. Keep frozen until ready to serve.
