Honey Vanilla Belgium Waffles with Blueberry Lime Syrup

 

I can’t believe we’re already one week into July! Summer seems to be flying by here, and we haven’t even taken any big trips! We’ve just been working on our house, hanging out with friends and family, and trying to relax. I’m living for all the fresh summer produce – especially the berries! I could eat fresh blueberries and strawberries every day, and they make such easy jams and syrups, too. This blueberry syrup was perfect on the honey vanilla waffles that I’m sharing with you today!

 

 

Waffles are one of my favorite things to make for breakfast (or dessert), because they’re easy, customizable for each eater, and so versatile. I’ve easily made 20 or 30 different kinds of waffles, and every time I save the recipe, telling myself ‘these are the waffles I’ll make again!‘ …And then I find or create a new recipe a few weeks later. 

 

 

 

 

But these waffles, guys! They’re hyped-up Belgium waffles with honey and vanilla, and they are so fluffy and light. These are finally the waffles that I will make again – and I already have! They’re lightly sweet, but not too sweet, so you can add all the sweet stuff you want on top. I topped mine with this blueberry syrup and whipped cream, but they’d be great with just some butter and maple syrup, too.  Oooh – or topped with creamy cinnamon honey butter! You can bet I’ll be trying them that way soon!

Honey Vanilla Belgium Waffles

A subtly sweet Belgium waffle with light hints of honey and vanilla

Servings: 4 servings
Ingredients
  • 2 c. all-purpose flour
  • 2 tbsp. cornstarch
  • 1 tbsp. baking powder
  • 1/4 c. honey
  • 1 egg
  • 1 1/4 c. milk
  • 2 tsp. pure vanilla extract
  • 1/2 c. vegetable oil
Instructions
  1. Preheat your waffle iron and spray it with nonstick spray.

  2. In a medium bowl, whisk together dry ingredients.

  3. In another medium bowl, whisk together wet ingredients. Add to dry ingredients in 3 parts, mixing lightly in between. Stir until ingredients are all incorporated. 

  4. Depending on the size and shape of your waffle maker, this will make 4-6 waffles. Use a 1/2 cup measuring cup to pour batter (you may need more or less, depending on size of iron) into waffle maker and cook according to your waffle maker's directions.

  5. Serve hot with blueberry syrup and whipped cream or any other toppings you dream up!
