Gooey Oreo Brownies – the simplest dessert EVER!
These Gooey Oreo Brownies are about to become your go-to dessert to take anywhere and everywhere. Everyone loves them, and they honestly can’t get any simpler to make!
These Gooey Oreo Brownies could probably be called my signature, go-to dessert. I make these whenever my husband needs something sweet or when I’m supposed to take a dessert somewhere and run out of time to either create a new recipe or make something complicated. And no one ever complains when I show up with them again; in fact, they celebrate, because the brownies are really stinkin’ good.
What I’m saying is these Gooey Oreo Brownies are 3 things: easy (like ridiculously simple), delicious, and gone in just a few minutes everytime.
A boxed mix; for real??
Yep. Sometimes I make desserts completely from scratch (re: Brown Butter Banana Bars with Caramel Icing or Cranberry White Chocolate Bars). But, sometimes, life is crazy, my one year old is screaming and refusing to be put down, my house is in shambles, and I just don’t have time to bake and clean up a bunch of ingredients (re: 5 Ingredient Lemon White Chocolate Cookies).
These brownies are one of those house-is-in-shambles-this-is-all-I-can-manage desserts that is still out of this world amazzzzing.
Making the Brownies
To start, buy yourself 3 things: a box of brownie mix, a package of Oreos, and a bag of large marshmallows.
Then, make the brownie mix by following the directions on the back of the box (so you probably need some oil, a couple eggs and water).
Spray a pan or line it with foil and spray it. Pour half the brownie batter into the bottom and spread it evenly. Place Oreos in rows: 4 rows with 5 Oreos across in each row.
Rip your marshmallows in half and put a half marshmallow in between each of the Oreos.
Top with the rest of the batter. I usually just spoon and drizzle the batter over the top so it covers it. (You will still see bits of Oreo and marshmallow – that’s okay, because the brownies will puff up as they bake).
Bake them according to the brownie box directions. Let cool completely before cutting, because the marshmallow makes them really gooey (but in a really good way).
Step It Up a Notch
If you want these brownies to be over-the-top-ridiculous, make some Oreo icing to go on them. Let’s make this easy: buy a can of cream cheese or fudge frosting. Crumble/crush about 6 Oreos and stir into the frosting. Spread over brownies and then tell me how much you love me! Ha.
- 1 family-size boxed brownie mix +ingredients required on back of box
- 20 Oreos (regular or double-stuff)
- 8 large marshmallows, cut in half

Mix brownie batter according to directions on back of box.

Pour half of batter into a lined 13x9 pan. Place Oreos flat in batter (don't press down) - 5 across X 4 down.

Place a half marshmallow in between each cookie (so each row should have 5 Oreos and 4 marshmallow halves).

Spoon/drizzle/spread remaining brownie batter over top of Oreos and marshmallows. Make sure top is mostly covered.

Bake according to the directions on your brownie box. Remove from oven. Cool completely before cutting.
