Creamy Goat Cheese Tortellini with Chicken Sausage – a 5 Ingredient Meal!

This Creamy Goat Cheese Tortellini with Chicken Sausage is the perfect weeknight dinner. It can be made in under 20 minutes with very little prepping, and it makes a large amount, so there’s a good chance you’ll have some leftovers for lunch the next day! Plus, it’s got goat cheese in it, so it must be heaven!

 

Creamy Goat Cheese Tortellini with Chicken Sausage

 

We are goat cheese fanatics in this house. Well, two of us are. If I cover any food that Camden is iffy about with goat cheese, he’ll inhale it without hesitation. In fact, this Red Pepper Goat Cheese Risotto is his favorite food; I actually made it for his first birthday! And I can eat goat cheese any day, all day and forever. Andrew likes goat cheese, but he’s not quite obsessed like we are. 

We are also an easy-and-quick-meal family as well. With a one year old, and work to do, I don’t care to spend a lot of time making dinner, But I do still want to make sure the dinners I make are mostly healthy and contain vegetables as well.

This Creamy Goat Cheese Tortellini with Chicken Sausage is everything you could want in a dinner:

  1. It’s quick – it took me less than 20 minutes to have it finished.
  2. It’s easy – the only ‘prepping’ is cutting the sausage and boiling water. Can you handle that?
  3. It’s fairly healthy – chicken sausage is a better option than other meats, and it’s got peas for veggies. Plus you could add some diced frozen carrots or bell peppers as well. 
  4. It’s coated in goat cheese – obviously. 

 

Making the Creamy Goat Cheese Tortellini with Chicken Sausage

Boil some water. When the water comes to a boil, add your tortellini and boil for 2-4 minutes, until tender and cooked through. 

While the tortellini is boiling, heat your fully cooked chicken sausage in the microwave for 1 minute. Slice each sausage in half lengthwise and then dice into half-circle pieces. 

Drain your tortellini, then return it to the pan over medium heat. Add your peas, goat cheese and milk. Stir until the goat cheese melts and becomes creamy. Make sure your peas are cooked through and warm. Stir in the chicken sausage until everything is coated and warm.

Serve immediately, or keep over low heat until ready to serve. Refrigerate the leftovers; this Creamy Goat Cheese Tortellini is still super creamy when it’s reheated!

Cheesy Scrambled Eggs – Scramble 3 eggs. Mix in 1/4 cup crumbled goat cheese, 1/2 cup frozen mixed veggies (thawed and heated in the microwave), and 2-3 cut turkey sausage links. Stir until goat cheese melts and coats everything. Season with salt and pepper. Eat, love, and make again!

Creamy Goat Cheese Tortellini with Chicken Sausage

Premade tortellini is cooked with chicken sausage and peas, then coated in a creamy goat cheese sauce, making a quick and easy dinner your whole family will love!

Ingredients
  • 1 pkg frozen, premade tortellini
  • 2 links chicken sausage, sliced and halved
  • 1 c. frozen peas
  • 4 oz. goat cheese, crumbled
  • 1/4 c. milk
  • salt and pepper to taste
Instructions
  1. Cook tortellini according to directions (boil water, add tortellini, cook for ~2 min, and drain).

  2. Drain tortellini and return to pot over low. Add peas, goat cheese and milk. Stir to combine until creamy. 

  3. Stir in chicken sausage. Season with salt and pepper. Serve immediately.
