5 Ingredient Lemon White Chocolate Cookies

I’m starting to come down off of my Christmas-cookie-baking-binge. So many holiday cookies; so little time. I made cranberry white chocolate bars, peppermint bark dipped cookies, cherry chocolate chip oatmeal cookies, buckeyes… the list goes on. But we had our big holiday party, we had Christmas with my family, and we’ll have Christmas with Andrew’s family next weekend. Then I think it’s time to take a break from baking cookies and focus more on some hearty, easy winter meals!

The last cookies I made were for Andrew to take into work. I wanted to make something for all the engineers to enjoy on their last work day before a lengthy break, but I didn’t have a lot of time. Camden is teething and wants my attention all. the. time. which leaves me with just a small window to make dinner. Nevermind baking cookies for everyone.

These lemon white chocolate cookies, though, are so stinkin’ easy. Only 5 ingredients – and one of those is a boxed cake mix! Cake mix cookies are my favorite shortcut cookies, because there is zero effort involved. No heavy mixing, no chilling, almost no measuring.

In fact, check this out:

Add a box of dry white chocolate pudding mix (I used Godiva White Chocolate Vanilla Bean pudding mix) to your cake mix. 

Stir in 1/2 c. oil and 2 eggs. 

Mix in 1 c. white chocolate chips.

Roll into balls, place on cookie sheet, and bake!

Done. Cookies for work/party/gathering/yourself – check. 

 

Seriously, it doesn’t get easier. And I feel like I get more compliments on cake mix cookies than on my scratch-made cookies sometimes! These will make any lemon-lover happy for sure.

5 Ingredient Lemon White Chocolate Cookies
Servings: 24 cookies
Ingredients
  • 1 box lemon cake mix
  • 1 (4 serving size) box white chocolate pudding mix
  • 2 eggs
  • 1/2 c. oil
  • 1 c. white chocolate chips
Instructions
  1. Preheat oven to 350 degrees. Line a baking sheet with parchment paper.

  2. In a large mixing bowl, sift together cake mix and pudding mix. 

  3. Stir in eggs and oil. Fold in chocolate chips.

  4. Use your hands to scoop and roll dough into 1 1/2 inch balls. Place on cookie sheet and flatten slightly with fingers.

  5. Bake in preheated oven for 9-11 minutes. Cookies should look slightly underdone; they will finish baking as they cool.

  6. Let cool on baking sheet for 5 minutes, then transfer to cooling rack to finish cooling.
