5 Grain Berry Banana Cereal

Guys, it is so darn hot right now – 96 degrees today! I’m struggling to cook because I just can’t stand the thought of heating up the kitchen, and I don’t want to eat anything hot either. So, it’s been mostly mini-meals and cold salads in this house. How are you all beating this hot, humid, summer-is-really-here weather?

 

 

 

This 5 grain berry banana cereal can be eaten hot or cold. Normally I make the hot cereal and put cold fruit on it, but lately I’ve been making the cereal ahead of time and refrigerating it so the whole meal is cold and satisfying. So, long story short, it’s delicious hot or cold!

 

 

I use Bob’s Red Mills 5 Grain Hot Cereal, but you can use any oatmeal, steel cut oats, multigrain cereal, etc. I highly recommend Bob’s 5 Grain, because it has 5 different grains (obviously!), so there is a texture component that you don’t get with plain old oatmeal. 

This cereal is light, healthy, sweet and fruity – perfect for this summer weather!

 

5 Grain Berry Banana Cereal

A hot (or cold) cereal topped with sweet mixed berries and sliced bananas. Can be made ahead of time and heated up as needed!

Servings: 4 servings
Ingredients
  • 2 c. Bob's Red Mill 5 Grain Hot Cereal
  • 2 c. water
  • 1 c. milk (I use skim or 2%)
  • 2 tbsp. honey
  • 1 tsp. cinnamon
  • 2 c. frozen mixed berries
  • 2 bananas, sliced
Instructions
  1. In a medium saucepan, heat berries with 1/4 c. water over medium heat. As they begin to heat up, use a potato masher or fork to mash them to desired consistency. I don't sweeten them, but you can add a little honey or sugar if you prefer. 

  2. Heat berries until thick and juicy, about 7-10 minutes.

  3. Meanwhile, in large glass bowl, mix cereal, water and milk. Heat in microwave for 1 1/2 minutes; stir. Continue to heat in 30-45 second increments, stirring in between until cereal reaches desired consistency.

  4. Stir honey and cinnamon into hot cereal.

  5. If serving immediately, divide cereal evenly among 4 bowls. Top with a spoonful of berry mixture and 1/2 of a sliced banana. 

  6. If serving later, let cereal cool before placing in a container to store in the refrigerator. Store berries in refrigerator. When ready to eat, add a little milk before you heat it up to make sure it retains its creaminess. Top with berries and bananas.

    Oatmeal is one of my favorite breakfasts, but this takes it to a whole new level! In the summer, I love to do overnight oats and I could see making this into an overnight oats recipe. I have not tried this particular brand of oatmeal, so I will have to check it out!
