3 Ingredient Instant Pot Sausage Dip

Summer is coming, which means all things cook-out, potluck and picnic. Mother’s Day brunches and cookouts, Memorial Day cookouts, Father’s Day celebrations, 4th of July parties… the list goes on and on.

And for a party or celebration like that, my goal is to make food that requires little effort and time, and that I can trust that people will wipe out. I don’t want to have to bring home a bunch of leftovers.

I’ve been making a version of the Instant Pot 3 Ingredient Sausage Dip for years, but it was a stovetop recipe. I don’t know where I got it, but I know that people love it. But, since I’m talking about using this as a summer recipe, I try to use the stove and oven as little as possible during the summer because it heats up the house.

This recipe takes minimal time and effort, and if you’re like me, the three ingredients are food items that I commonly have in my fridge/pantry/freezer.

Making the Instant Pot Sausage Dip

I feel like I’m a broken record in all of my recipes, because I say all the time: It really doesn’t get much easier than this recipe. 

But hopefully, that’s one of the reasons you come to my blog again and again – you’re looking for easy recipes and I’m giving them to you.

So – gather your ingredients: 1 pound roll of ground turkey sausage (or pork; it’s up to you!), 2 blocks of cream cheese, and a can of original Ro*tel.

Pour 1 cup of water in your Instant Pot. Pour the can of undrained Ro*tel in and dump in your sausage. Smash the meat down and break it up a little bit; you want to make sure it’s fairly spread out so it will cook quickly for you.

Put on the IP lid, turn the knob to ‘seal’ and set the pot to ‘Manual’ for 4 minutes.

When the timer goes off, quick release the pressure. That means you flip the knob to ‘vent’ so it releases all the pressure quickly (make sure you use a hot pad or keep your hands and face out of the way of the steam!).

Remove the lid. Take the inner pot out of your IP and drain off any grease/fat//water.

Turn your pot to ‘saute.’ Cube your cream cheese (cut each block into 8 cubes) and drop them into the Instant Pot.  Stir the mixture together until the cream cheese is melted and the sausage is broken up (use your spatula or spoon to break the meat up as you stir). Season with salt and pepper.

Tip: If it seems too thick, you can add a little milk or sour cream to help thin it out to your desired consistency. 

Serving the Instant Pot 3 Ingredient Sausage Dip

Serve dip hot or set your Instant Pot to ‘keep warm’ until ready to serve. You can also refrigerate the dip and reheat it in the microwave for another day.

Serve the dip with tortilla chips (ones with a hint of lime are sooo good), fresh-cut veggies, homemade pita chips, sliced baguette, or anything else that sounds good for dipping!

Instant Pot 3 Ingredient Sausage Dip

a quick and easy, creamy and delicious sausage dip that will have everyone going back for seconds!

Ingredients

• 1 lb. ground turkey or pork sausage (mild or hot - your choice)
• 2 blocks (8 oz each) cream cheese or Neufchatel cheese
• 1 can (14 oz) original Ro*tel, undrained

Instructions

1. Add 1 c. water to the bottom of the Instant Pot. Pour in undrained Ro*tel and dump uncooked sausage on top. mash and break up sausage. 

2. Close lid, turn knob to 'seal' and set to 'manual' for 4 minutes. When timer goes off, quick release pressure.

3. Drain grease/fat/water out of IP. Set pot to 'saute' and add cubed cream cheese and drained Ro*tel. Stir until creamy, melted and combined. Season with salt and pepper.

4. Serve with tortilla chips, fresh-cut veggies, sliced baguette, homemade pita chips, or anything your heart desires!
