Bacon Wrapped Grilled Pork Loin
This Bacon Wrapped Grilled Pork Loin is the perfect combination of sweet and savory. The delicious honey glaze seals the flavor of the salty bacon around the tender pork loin, and it’s mmm… good!
I have to admit – I don’t do the grilling in our house. I prep the food to be grilled, but my husband does the actual grilling. But his idea of prepping grilled meat is to season it with some Lawry’s Seasoned Salt and be done.
That’s what he used to do with pork chops and pork loin. And then I introduced him to the idea of rubs, glazes, and wrapping his pork loin in more pork. He was hooked! We make pork loin on the grill almost exclusively this way, because he likes it and it’s fairly easy to do. It does require a little bit of time to prep the rub and the glaze, but it’s absolutely worth it!

You’ll need a pork loin that’s about 3 pounds. You want it to be a bit on the slimmer side, so that the strips of bacon can fit fully around it.
You’ll also need a package of bacon. Other than that, you need a list of spices (brown sugar, season salt, garlic powder, black pepper, allspice and rosemary) and some liquid pantry staples (honey and balsamic vinegar).
I always make at least double of the rub, so that way, the next time I go to make it, my ingredient list is just ‘spice rub’ instead of all those ingredients!
Prep the pork loin by trimming off any excess fat.
To make the rub, combine a tablespoon of brown sugar, 3/4 teaspoon of seasoned salt, 1/2 teaspoon of roasted garlic powder,* 1/2 teaspoon of black pepper, and 1/4 teaspoon of allspice in a small bowl.
Rub the loin on all sides with the rub. Use every last bit of it.
*You can use regular garlic powder if you don’t have roasted. The roasted just adds an extra depth of flavor.
In a medium bowl, whisk together one cup of honey with 3 tablespoons of balsamic vinegar. Stir in 2 teaspoons of crushed rosemary, a teaspoon of roasted garlic powder and 1/4 teaspoon of allspice. Mix well and set aside.
Lay the strips of bacon out on a plate, with each one overlapping the previous one slightly. See the photo for clarification!
Lay the pork loin in the center of the plate, on top of the bacon. Wrap the strips of bacon up to meet in the middle. After every couple of strips, stick a toothpick in to help hold the bacon on. Wrap the whole pork loin and toothpick it well.
Use a thinner cut bacon (but not ultra-thin or it might tear!). A thick cut bacon is hard to wrap completely around the pork loin.
Heat your grill. Cook the pork loin in the center of the grill for about 25 minutes, turning the loin carefully every 5 minutes or so. Each time you turn the pork, glaze it all over as well. Glaze the loin at least 5 times while cooking, more if desired.
Use a meat thermometer to check the internal temperature of your pork. It needs to be at least 145 degrees to be done and edible.
