How do you feel about tomatoes? I feel like they’re almost like cilantro – people either love them and use them in everything or people flat out despise them.

My husband does NOT like tomatoes by themselves at all. Sure he’ll eat salsa like nobody’s business, marinara, and pizza, but fresh tomatoes on his sandwich are a no-go.

I don’t love fresh tomatoes, but I don’t mind them on sandwiches. And our son, Camden, loves tomatoes in any form. Which works we for Andrew, because now when he’s got a tomato on his sandwich, he just passes it off to Camden. He feels like he’s giving Camden a treat instead of getting rid of something he doesn’t like. Ha.

But, then – enter sun dried tomatoes. love these things. I can’t get enough of them on salads, pizzas, pasta, wherever I can put them. My husband isn’t too sure about them – in fact, he tried to refuse to eat this dip and said he’d just trust me that it was good.

Then he caved and tried it. And tried it again. Then he ate some more. And then he said, “You know, this stuff really grows on you after a while!” haha. So, if I won him over, this dip will win pretty much any tomato-hater over. It’s the goat cheese, man – it’s magic!

 

The best part of this dip? It’s so ridiculously easy to make! Just read on:

 

Making the Dip

I used my Ninja blender, but if you have a food processor (I do not – my Ninja doubles as one) you can use that as well.

Throw your tomatoes and garlic into your blender. Give it a good pulse – 10 or 12 times – to chop your tomatoes up fairly well. You might have to open it up and scrape them down from the sides a bit.
Add in everything but your goat cheese and blend until smooth. Then add your goat cheese in and blend again until smooth. Adjust the salt and pepper if necessary.

And that’s it! Spoon the dip into a pretty bowl, and add some pretzel crisps or pita chips or fresh veggies to dip into it, and you’re golden!

Ingredients
  • 1 c. mayo
  • 1/4 c. sour cream
  • 1/3 c. sun dried tomatoes in oil, drained
  • 2 cloves garlic, minced
  • 1/2 tsp. dried basil
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 4 oz. crumbled goat cheese
Instructions
  1. Put your tomatoes and garlic into your blender or food processor. Pulse until well chopped.

  2. Add mayo, sour cream, basil, salt and pepper. Blend until smooth.

  3. Add goat cheese. Blend again until smooth.

  4. Serve with pretzel crisps, pita chips, tortilla chips or fresh veggies.
