These chewy peanut butter chocolate chip cookies are the perfect dessert for any occasion. They’re easy to make, soft and chewy, and so good that you don’t have to worry about leftovers!
Cookies are a staple dessert in our house for two reasons: they are easy to take to a get-together or event and they’re easy to leave. I like to make cookies for get-togethers because they’re fairly quick to make, and they go over well (who doesn’t grab a cookie – or 2 or 3 – to snack on at parties??).
Plus, when I’m getting ready to leave, it’s easy to foist a few cookies off on a few different people, leaving me with an empty plate to take home. Which is perfect, because otherwise, I’m going to end up eating the cookies myself. And then I’ll won’t fit into my pants. And I can’t afford new pants; not with a growing 8 month old!
I sent these chewy peanut butter chocolate chip cookies with my husband to a party with his friends, and he came home empty-handed! The few cookies that were left were quickly snatched up by a fellow cookie-lover before he came home. They are really that good!
These chewy peanut butter chocolate chip cookies are a current favorite in our house. I’ve made classic chocolate chip, pumpkin chocolate chip, banana chocolate chip, and now these chewy peanut butter chocolate chip cookies. These, by far, are my husband’s favorites. They have a light peanut butter flavor, they’re chock-full of peanut butter and chocolate chips, and they’re dense and chewy. In my opinion, the only good cookie is a chewy cookie. Amiright? Don’t just take my word for it – here’s a list of the best chocolate chip cookie in each state, and every one of them is chewy!
The cookies keep well too: I’ve had them in a covered container on the counter for 3 days and they’re still chewy! That’s a definite bonus point, in my opinion.
Everyone has their feelings and opinions (and usually pretty strong ones, at that) about the best kind of chocolate chip cookie. But if you’re looking for the perfect twist on the classic, you’ve found it!
These chocolate chip cookies are chewy, and oh so delicous!
Preheat oven to 350. Line a baking sheet with parchment paper.
In the bowl of a stand mixer, cream butter and sugars until light and airy (at least 3 minutes).
Add in vanilla. Mix briefly. Add in eggs, one at a time, mixing briefly in between.
Mix in peanut butter until smooth.
Sprinkle baking powder over top of mixture.
Add flour and mix in alternating amounts, starting and ending with flour:
1 c. flour. Mix.
2 tbsp. milk. Mix.
1 c. flour. Mix.
2 tbsp. milk. Mix.
1 1/2 c. flour. Mix.
Gently stir in chocolate chips and peanut butter chips.
Scoop dough onto baking pan in 2 tbsp portions, spaced about 2 inches apart.
Bake 9-11 minutes. Cookies should look slightly underdone. They will finish baking while cooling.
Let cool for a few minutes on baking sheet, then transfer to a cooling rack to finish cooling.
